These cookies look so yummy. I read the Kitchn article about cream cheese vs Neufchatel cheese and I am guessing you are adamant about not using it because of the fat content? Neufchatel is pretty much all I ever use for recipes that call for cream cheese…I find your small batch cheese cake bars are delicious using the lower fat option.
I am curious as to how these cookies will turn out with the lighter version. Have you tried using it and were dissatisfied?
