Hi Kate!
Since it worked great the first few times, it sounds like there was a measuring error. Did you add too much melted butter? The whole egg? Or maybe measure the flour differently? Flour is measured in a dry measuring cup without a spout :)
And yes, I call for large eggs only, not extra large.
Next time, just add a bit more flour and proceed :)
