I think I know the problem! When I typed ‘chill at least 4 hours,’ I meant to say chill for 4 hours. I’m guessing if it’s left overnight, it sets into a proper custard with the gelatin and fat from the coconut. The mixture should just be cool when pouring into the ice-cream maker. If it’s warm, it won’t churn properly.
