OMG they were so good! They just came out of the oven and were amazing. Hubby loved them! He wanted a big cookie and he got a biiiig cookie! I only ate half a cookie and it felt like three. He’s still complimenting me ten minutes later. I used sifted almond meal, light brown sugar, and peanut butter. I didn’t notice any rough texture. Almond meal was easy for me to get (at Winco) in bulk bins and I don’t remember it being very expensive. I’m so glad to have a GF recipe that doesn’t include special expensive flours or xantham gum etc. This is the third dessert for two recipe of yours I’ve tried and they are all winners. Next time I’m going to try the red velvet cupcakes. Thanks so much!
