what about commercial ice cream stabilizer mixes (mix of multiple types of gums, plus emulsifiers). I read today gelatin is more of a sorbeto thing rather than ice cream.
I just noticed you picture Thai Kitchen coconut milk which compared to Trader joes (pure) have guar gum and probably some other stabilizer in them already.
