OMG they were so good! They just came out of the oven and were amazing. Hubby loved them! He wanted a big cookie and he got a biiiig cookie! I only ate half a cookie and it felt like three. He’s still complimenting me ten minutes later. I used sifted almond meal, light brown sugar, and peanut butter. I didn’t notice any rough texture. Almond meal was easy for me to get in bulk bins and I don’t remember it being very expensive. I’m so glad to have a GF recipe that doesn’t include special expensive flours or xantham gum etc. Thanks so much!
