Bakeries use cream cheese frosting but it is incorrect for Waldorf Astoria Red Velvet Cake. My mother had the original recipe in 1960 & in 2014 I visited the Waldorf hotel in NY, ate their cake & asked about the icing (same as my mom’s recipe- not cream cheese)
5tbsps flour & 1 cup milk in saucepan – stir over medium heat until a paste, cool. Whip 1 cup butter with 1 lb. powdered sugar, add 1 tsp vanilla. Then on high speed whip paste into butter/sugar & mix until light whipped cream texture. Cake layers should be sliced into two making 4 layers (I use thread) so Cake is almost like a torte. I’ve made this cake for 55 yrs!
